Another traditional Greek meze from fine fresh bonito fillets that are selected and cleaned with special care and “baked” for days in salt and then in brine. It is preserved in sunflower oil, keeping its taste and rich body. It is served with olive oil and lemon juice or vinegar and accompanies ouzo, tsipouro and legumes.
